Jalapeno Popper Stuffed Chicken

Hope you try it and love it as much as I did!
Now it's time to cook!
1. Preheat the oven to 350˚F
In a medium bowl, mix cream cheese, cheddar cheese,
and diced jalapeño.
I cut the jalapeño myself, but you can buy diced
jalapeños in cans at the store
2. Season the chicken with a little salt on both sides.
Cut a pocket into the side of each chicken breast.
Stuff the pockets evenly with the jalapeño mixture.
Press the edges of the chicken together to seal the pocket.
3. Separate the flour, eggs, and bread crumbs/panko into 3 separate bowls.
I mixed in bread crumbs with some panko to give the chicken some extra crunch!
4. Dip the stuffed chicken in the flour, then the egg,
then the bread crumbs/panko, coating it evenly.
5. Heat the oil in a large pan over medium heat.
6. Fry the chicken until golden brown on both sides in the pan.
This only takes a few minutes! Make sure not to
burn the bread crumb coating!
7. Use baking sheet or spray pan to avoid sticking.
Transfer the chicken to a baking dish, then bake for 20 minutes.
8. Serve and enjoy!
